COCONUT OIL RECIPES1. Chicken cooked in coconut oil
Ingredients :
Chicken cut into small pieces - Half Kg
Coconut oil 4 Table spoons
Onions cut into small pieces – 2 in number
Cumin powder - 1 tea spoon
Turmeric powder 1 tea spoon
Ginger garlic paste – 2 tea spoons
Green chilies – 3 in number
Salt
Cooking method.
Take a frying pan. Heat the coconut oil. Add the cut onions and fry for five minuets. Then add slit green chilies and ginger garlic paste, cumin powder, turmeric powder and statute for another five minutes. Add required amount of salt.
Add chicken pieces and fry for another 5 minutes. Add little bit of water say about half a glass and keep on fire still the water evaporates and the chicken is fully cooked.
Your chicken is ready to be served. This chicken suits well with rice.
2 , Coconut oil rice
Ingredients:
Cooked rice 6 cups
Green chilies – 4 cut into very small pieces
Coriander leafs – finely minced half cup
Curry leaves – 10 leaves
Mustard seeds – one spoon
Urid dhal broken – 2 spoons
Salt
Cooking method.
Heat coconut oil in a pan. Add mustard seeds and urid dhal and allow it to pop. Next add curry leaves, chopped coriander leaves and green chilies. Fry for three minutes and add the cooked rice and fry for another 5 minutes. Add required amount of salt.
3, Prawns cooked in Coconut oil
Ingredients:
Prawns - half kg
Coconut oil – 4 table spoons
Onions finely chopped – one cup
Tomato paste – one cup
Ginger garlic paste – 2 teaspoons
Thick Coconut paste – one cup
Chopped coriander leaves – 3 table spoons
Cumin seeds powder – 2 spoons
Turmeric powder – half spoon
Red chilly powder – 2 spoons
Salt
Cooking method.
Heat coconut oil in a frying pan. Add chopped onions and ginger garlic paste when onion is fully cooked and turns golden add tomato paste and cook until all the water disappears and oil starts separating in the sides of the pan. At this stage add the prawns and statute for 2 minutes next add cumin powder, chilly powder, turmeric powder and salt then mix well. Until the powders gets blended with the prawns. Now add the coconut paste and cook for ten minuets on low flame. Your prawns curry is ready to be served.
